Sepia toning has a real history. Nineteenth-century photographic prints were treated with a pigment derived from cuttlefish ink, which converted the metallic silver in the print into a more stable compound. The warm brown cast was a side effect; the point was that sepia-toned prints survived decades longer than untreated ones. That is why surviving Victorian photographs are brown.
The digital filter reproduces the tone. It maps the image to a warm monochrome palette, keeping the tonal structure of a black and white conversion but replacing neutral grey with amber. The result reads as archival rather than merely colourless, which is why it suits family history projects, heritage material and any design that wants to feel older than it is.

Sepia and grayscale both discard the original colour and keep only luminance. The difference is what they map that luminance onto: grayscale uses neutral greys, sepia uses a warm brown ramp. Everything true of one is true of the other in terms of what survives — tonal separation, texture, contrast.
Where sepia is genuinely different is in what it signals. Grayscale reads as a deliberate artistic choice made now. Sepia reads as age. That makes it right for a heritage exhibit or a genealogy page and wrong for a modern portrait, where it tends to look like a filter rather than a decision.
If you are scanning genuinely old prints, apply sepia last rather than first. Scans of aged prints often come in with an uneven colour cast, foxing and fading that vary across the sheet. Correct the exposure with Brightness & Contrast while the image is still in colour, then convert — the tone will be even across the whole frame instead of inheriting the blotches.
